Gellan Gum
Gellan Gum occurs as an off white powder. Gellan Gum is a hydrocolloid produced by the microorganism Sphingmonas elodea under carefully controled fermentation procedure from a carbohydrate source (glucose), nitrogen source and a number of inorganic salts. It is soluble in hot or cold deionized water. Gellan Gum is available only low acyl content.
