Sodium Aspartame
Aspartame occurs as a white, crystalline powder. It is sparingly soluble in water and slightly soluble in alcohol. The pH of a 0.8% solution is between about 4.5 and 6.0. It approximately 200 times sweeter than sugar, having a taste closely similar to that cane sugar, processing a clean sweet taste of sugar without and bitter or metallic taste. Recommend to add aspartame after heat treatment to avoid the breakdown of aspartame fenilalanin and methanol.
